Burrito Bowl

Sometimes you just need something that feels like a hug in a bowl. This takes the classic burrito elements and deconstructs them into a comforting bowl of goodness.
Now I know this might be an unpopular opinion but I really don’t enjoy the thought of all of these components being smushed up into a tortilla wrap. However, put them in a bowl and I am in burrito bliss!
Recipe
Serves: 4
Ingredients:
- 250g Beef Mince
- 1 Small Onion, Finely Diced
- 400g Tin Black Beans, Drained (235g)
- 1 tbsp Tomato Puree
- 1 tsp Smoked Paprika
- 1 tsp Salt
- 1 Packet Microwave Rice
- 1 Large Avocado
- 15 Cherry Tomatoes, Very Finely Diced
- 2 Inch Piece of Cucumber, Very Finely Diced
- Small Bunch of Coriander, Chopped
- Grated Cheddar
- Sour Cream
- Veg Oil for frying.
- Jalapeños
- Lime Wedges
- Tortilla Chips
Method:
- Mix the cucumber, coriander, tomatoes and the juice of another lime wedge in a bowl to make a salsa and set aside.
- Peel & dice the avocado and squeeze a lime wedge over so that it doesn’t go brown.
- Fry the beef mince and onion in a hot pan with a drizzle of veg oil until the onions are soft and the beef is caramelised and brown.
- Stir in the black beans, tomato puree, smoked paprika, salt and microwave rice and cook until everything is piping hot.
- Assemble the dish with the beef & rice mixture at the bottom, topping with the cheese, sour cream, diced avocado, salsa, jalapeños, tortilla chips and a lime wedge.
