Prawn Po’Boy

Okay so hear me out…nobody wants to be battering or breading a prawn in a kitchen the size of a postage stamp. Lucky for you supermarkets sell these fantastic things called SCAMPI!! Turn a boring pub grub staple into a fancy sandwich that the whole family will love!
This recipe uses wholetail scampi with a Cajun inspired mayo, crisp lettuce, tomatoes and pickles. (If you don’t like pickles, either grow up or remove yourself from my page immediately!)
Recipe
Serves: 2-4
Ingredients:
- 300g Scampi
- Baguettes (4 small or 2 large)
- Little Gem Lettuce, Shredded.
- 1 Tomato, Sliced
- Pickled Gherkins, Sliced (optional but not really optional)
- 2 tbsp Mayo
- 1 tsp Dijon Mustard
- 1 tsp Hot Sauce
- 1/2 tsp Paprika
- 1 tbsp Pickle Juice
- Cajun Seasoning (optional)
Method:
- Put the scampi in the oven/air fryer and cook according to the pack instructions
- Mix the mayo, Dijon mustard, hot sauce, paprika and pickle juice in a bowl and set aside.
- Once the scampi are cooked, you can begin to assemble your Po’Boy. Slice the baguettes lengthways and slather them in the mayo mixture before stuffing them with lettuce, scampi, tomatoes and pickles.
- Enjoy on their own or serve with some Cajun spiced fries.
Tips & Tricks
Tricks:
- The optional Cajun seasoning in the ingredients list is to toss the cooked scampi in for an extra flavour punch.
Tips:
- If you are not a fan of fish, you can also stuff this with roast meats such as beef or pork and for the veggies, I reckon a breaded garlic mushroom would be delightful!
